Ingredients:
1 1⁄2 lb boneless, skinless chicken breast, cut into bite sized pieces
1 container (6 oz) plain greek yogurt
1⁄2 cucumber, peeled, seeded, and grated
1⁄4 cup olive oil
2 tbsp lemon juice
2 clove garlic, minced
1 tsp dried oregano
1⁄2 tsp salt
1 tbsp olive oil
2 tsp lemon juice
1 clove garlic, minced
1 tsp dried dill weed

Instructions; 
First, combine 1/4 cup olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, oregano, and 1/2 teaspoon salt in a large resealable bag.
Then, add chicken, coat with marinade, squeeze out excess air, and seal the bag.
Marinate in the refrigerator for up to 2 hours.
Do not marinate longer, otherwise the acid in the lemon juice will start to "cook" the chicken and make it tough.
Mix yogurt, cucumber, 1 tablespoon olive oil, 2 teaspoons lemon juice, 1 clove minced garlic, dried dill, and a pinch of salt together in a bowl.
Refrigerate tzatziki sauce for flavors to blend, 1 to 2 hours.
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
If using wooden skewers, soak them in a bowl of water for about 15 minutes.
Remove chicken from marinade and thread onto the skewers.
Discard remaining marinade.
Cook skewers, turning frequently, until nicely browned on all sides and the chicken is no longer pink in the center, about 8 minutes per side.
Serve with tzatziki sauce.
Note:
For thicker tzatziki sauce, place grated cucumber in a colander, sprinkle lightly with kosher salt, and let it sit for a while to drain.
Squeeze out any extra moisture before mixing with the other ingredients.
