A chimichanga is basically a burrito that is deep fried. So when we call these Oven Baked Chicken Chimichangas I guess we should really be calling them Oven Baked Burritos because that’s all it is.

I've made this exact recipe which is very good and I've also now made variations on it- like ground beef instead of chicken and a breakfast version with scrambled eggs, bacon, & cheese.
These are seriously so good! They taste just like the ones I had when I was little! They might be my favorite thing I've tried from Pinterest.
This is a regular on my menu. I use all different types of fillings but the easiest one for me is throwing a can of black beans, a package of chicken thighs and a jar of salsa in the crock pot all day. Use that as the filling with some cheese and bake as directed. Yum yum.

  •  2 cups cooked chicken , chopped or shredded
  •  1 cup of your favorite salsa
  •  1 teaspoon ground cumin
  •  1/2 teaspoon dried oregano leaves , crushed
  •  1 cup shredded cheddar cheese
  •  2 green onions , chopped (about 1/4 cup)
  •  6 8 inch flour tortillas
  •  2 tablespoons butter , melted
  •  diced tomato , sour cream, guacamole, salsa, and shredded cheddar cheese for topping

  1. Preheat oven to 400°F.
  2. Mix chicken, salsa, cumin, oregano, cheese and onions. Place about 1/3 cup of the chicken mixture in the center of each tortilla.
