I used to eat this a lot. Very easy and good as I would use my tupperware rice cooker to make the quinoa while I was cooking up the mushrooms.

This dish was amazing! I have tried it with quinoa only and also with minute rice brand quinoa, rwd and wild rice and both times it was wonderful.

My hubby loved it as well and he usually hates anything healthy. The only thing I did different is I used baby bellas instead of the reccomended mushrooms and added extra mushrooms as well.Soooo...sooo good! I've made this twice now and I love it. Add some roasted chicken breasts for a full AWESOME meal.


  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, thinly sliced
  • 5 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons grated Parmesan


  1. In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside.
