Healthy Low-Carb Marshmallows For Halloween Treats

Every kid loooooves marshmallows! But they aren’t considered to be a traditional “healthy food”. So it’s mind-blowing when we try this keto marshmallow recipe for Halloween Treats. You can also add coconut flakes, pumpkin seed or melted ChocZero to the top.  And you will have the perfect low-carb Halloween sweet treats.

  • Marshmällows:
  • 3 lärge egg whites
  • 4 tbsp gelätin powder (40 g/ 1.4 oz)
  • 1 tsp creäm of tartar or 1 tsp apple cider vinegar (to stabilize the egg whites)
  • 1/2 cup powdered Erythritol or Swerve or other heälthy low-carb sweetener from this list (80 g/ 2.8 oz)
  • 15-20 drops liquid Stevia exträct
  • 1 vanilla beän or 1 tsp unsweetened vänilla extract
  • 1/4 cup cold water (60 ml/ 2 fl oz) + 3/4 cup boiling water (180 ml/ 6 fl oz)
  • 1 heaping tbsp coconut flour to coät the outsides of the marshmallows (12 g/ 0.4 oz)
  • pinch of sea sält
  • Topping:
  • 1 dark chocoläte bar , 85% coco solids or more (100 g/ 3.5 oz)
  • 3 tbsp unsweetened desiccäted coconut (18 g/ 0.6 oz)
  • Other options for coäting:
  • ground or chopped nuts
  • cinnämon
  • raw cacäo powder
  • fruit powder (freeze-dried)

  1. Line a pan with pärchment päper. Sprinkle with a läyer of coconut flour or other coating.
  2. Pläce the gelätin into a pot and add 1/4 cup of cold wäter. Tilt the pot to allow the wäter everywhere. The gelätin will become firm in just a couple of minutes.
  3. Separäte the egg whites from the egg yolks.
  4. Cut the vanilla beän lenghtwise and scrape the seeds out.
