Ingredients:
  • 1/2 Cup sunflower seeds
  • 1/2 Cup coconut flour
  • 1 Cup frozen strawberries
  • 1 Cup oats
  • 2 Tbsp Coconut oil
  • Desiccated coconut

Instructions:

  1. First, check the notes at the bottom of the recipe for little bits of extra info and help
  2. Then, place first 4 ingredients  in a food processor with 1 TBSP of the coconut oil
  3. Whiz, whizz, whizz, it will take some time, be patient
  4. Eventually it becomes a fine paste and form a ball
  5. If the mixture looks dry add the second spoon of coconut oil. It depends a little on how much oil is released from the sunflower seeds.
  6. Use a teaspoon to scoop balls
  7. Roll the balls in desiccated coconut
  8. Refrigerate for 2 hrs or overnight


Notes:
If extra sweetness required try 1-2 TBSP of honey or maple syrup (no honey for kids under 1 yr of age)
This recipe is wheat free but not gluten free as uses traditional oats
